Yes
Yes, the Elite 4 & 5 both have a quick release bracket.  The Elite 7 & the whole HDS series has a more "traditional" 2-knob bracket.  All the 2014 & newer units have 2 cables; 1 power, 1 transducer that have 1/4 turn locking collars to keep secure/water tight to the head unit.

Easy removal, like Bill said just a quarter turn for each cable, then just slide up to unclick and release from the mount (Ram mount in this case).
