The ol standby

place opossum on brick..
wrap with news paper
toss in 400 degree oven for eight hours

when done.. toss the opossum and paper ....then eat the brick

ps while trying to trap a badger a few years back I caught every cat and skunk in the neighborhood..no badgers

Best eaten cooked fast and hot.

If u have never eaten one be forewarned. There is a certain "flavor" that they have, almost like a catfish tastes different from a trout. They taste different than other game animals.

Not like chicken.

I'm guessing their taste varies based on what they've been eating. In NZ, they eat possum, but it's a different species.
Didn't Elvis eat American opossum? Or was that squirrel?

If you did a turkey that way, re-use the oil for the possum.  Skin it firs though.  And no need to gut it, you won't be able to tell the difference in taste anyway...

The New Zealand possums are prettier.  Their pelts sell for about $75 each.





BTW, just asked my dad; he said they DID gut them as well as skin 'em before cooking!!  Could have fooled me.....
