Carp the other Dark meat!!!

After an all night brine  white wine, soy, salt, sugar, fresh cracked pepper, fresh lemon juice/slices sesame oil...13 hr smoke with apple wood/Hickory found it still moist and if you didn't know what it was.....

Kind of a liver/steaky taste...what a waste of resource's it is ABSOLUTLY worth your time to smoke it up

handed a piece to my father and he said "is this Salmon"

I think it's mental...but your right it tastes like what it's been eating...highland springs res is sweet clear water...maybe CL carp might taste dif....but you bring up carp and eating in any conversation and peeps are turned off...I think it's because were conditioned!!!

I snagged one sturgeon fishing in Lisbon Slough. This guy run down and was asking if I was going to keep it, and I told him no, so he took it. It was a big one too. I hear they are meaty, lookin at you pics, it does.

Out here I have only caught a few, but have petitioned to have them added to an expanded 25sp list for AOTY!  Can I get another Amen on that!!  'cause who doesn't want to target 30-50# foish for bragging rights?

Good deal Sledge.  I like the interesting stuff like that.  I think the asian community has been keeping it a secret along with Shad.  There is that huge issue with the Asian Carp back east and central but yet there are people starving or malnourished.  There are some big boys roaming the side sloughs between Watt and Howe.
