Ok, so I spent the morning cleaning halibut today and a few were too big for my cutting board, also had an issue with the fish sliding around on the board. What are you guys doing
 For breaking down bigger halibut.

Non bummer problem, I’m working on finding the right cut/type of wood on the cheap, from the lumberyard but haven’t settled in the wood type yet.  Thinking something kinda custom plywoody cut 2’ tall 4’ long 1” thick. Wot you tink? :smt006

I typically use my plastic folding table without a cutting board
Put a wet washcloth or wet terry cloth towel under the fish
Tap Plastics sells cutting board material, could buy any size you need there I suppose

I always process catches on my plastic folding table and will use a towel underneath or the rubber interlocking play mats.  Either works well enough to prevent the carcass from sliding around although the rubber mats make for easier cleanup.

If using wood, I would stick to solid slabs, not a laminate like plywood - lots of chemicals there.

When I was a kid, we used to use a thick piece of plexiglass to break down big game, like deer/elk/larger fish. 3x3 or so from what I remember. Worked fine, was easy on knives, washed easily afterwards.

Could probably use a piece of HDPE plastic too.

I use a fillet-away mat. Throw it down on your work surface and your fish won’t slide. They are a bit small for large fish so I have 2. There are also copycat versions that are larger.

Awhile back I redid the top on my FM1 fillet table with some Hdpe from Tap Plastics.

+1 for Tap Plastics gang. You can get the 1/2" HDPE cutting board material--I think it was $14 per sqft. I got a 40" x 24" sheet cut and I rounded the corners, chamfered the edges, and cut a handle myself. about $95 I think. Love it. Good for baking and rolling out dough too.

I got a sheet of 3/8” HDPE from amazon. It’s 48” by 28” and fits on my tailgate perfectly. I think it was about $70. I selected the cheapest color because it was about $25 less than the other colors (dolphin grey, ironically). I also use it camping on top of dirty picnic tables.
