I didnt baste the scraps or head. Thinking of removing meat with a fork and adding a little mayo and dill served over some type of cracker. Think i will change it up to sour cream.

I caught 19 lake trout on May 7 and smoked up a bunch of them.

1. Lake trout fillets cut into portion-sized pieces.

2. Brining the fillets in ziplock bags.

3. Drying the surface of the brined fillets by putting them on smoker racks in front of a fan for about an hour.  Wet fish doesn't absorb smoke well.

4. Fillets in the smoker.

5. Cooling the smoked fillets in my refrigerator to prepare them for vacuum packing.

6. Vacuum packed smoked lake trout, ready for the freezer.

Thanks Vic. Hang out with him as much as possible while he still can. Almost 80 yrs young. He keeps reminding me how much he loves fresh salmon. :smt005

You should come hang out with us at mcswain for some trout fishing when it opens
