what brand of smoker Alex ?

Just a little inexpensive electric one Vic but works great.
I like Masterbuilt electric smokers.  I had a four rack Masterbuilt, sold it to a friend (that's a recommendation right there; if I didn't like it, I wouldn't have sold it to a friend), and bought a six rack Masterbuilt.  Get one with a solid door; if you get one with glass in the door, the glass is just going to get all gooked up.

The brine recipe I used on those lake trout is based on the"Sweet Teriyaki" brine recipe from Scott and Tiffany Haugen's book "Smoking Salmon & Steelhead," with the salt adjusted to produce a salinity of 60 degrees Salometer.  I adjust all of my brine recipes to 60 degrees Salometer so I can use the same brining times with all of the recipes.  Here's the ingredients to produce 4 cups of brine:

2.75 cups water
.9 cups teriyaki sauce
.3 cups molasses
4.3 oz salt
.9 cups brown sugar

I have the recipe on an Excel spreadsheet so all I need to do is enter the number of cups of brine I want, and all of the ingredients adjust automatically.  Here are examples of the brining times which I use with this recipe:

8"-10" kokanee fillets - 1.5 hours
14"-17" trout fillets - 2.25 hours
15"-18" kokanee fillets - 2.45 hours
18"-24" lake trout fillets - 3.5 hours

I built a gaff for a Comm'l friend of mine, he brought a nice 10lber over as a trade.
Got the belly, collars and tail pieces brining now and will pop 'em the Little Chief this afternoon.
