I was fortunate enough growing up near " Marks " hot dogs off of alum rock in san jose . A foot long dawg in natural casing . Fresh cut onions and tomato wedges. Steamed buns .  :smt007

Easter Sunday was a brisket and pork ribs.  Today I’m taking another stab at the rack of beef ribs.  Eddie that Duck looks awesome, I think I’m gonna have to try fowl for my next smoke.

Being half Italian (my grandparents were off the boat) I grew up eating a lot "real" Italian food .

My Nonno would cringe at a lot of the "American-Italian" dishes here in the U.S... that being written I do on occasion cave to the wishes of my wife and kids and make a dish "American" style

I still think Nonno Pietro is right, he thought American-Italian food was over cheesed,too much garlic and over sauced and I can only base things off his cooking and my Nonnis and moms cooking .

Like I said I caved so I made stuffed shells with Italian sweet sausage,Ricotta cheese,Mascarpone ,Mozzarella and Parmigiana cheese ,Italian Parsley and a Marinara sauce

Sorry to be so pretentious and I could write  a shorter post ...on the other hand I`m half Irish, so  why use three or four words when I can use twenty or thirty
