So for the past 3 weeks it’s been strictly home cooking at my house.
No restaurants, drive throughs or meal deliveries.

So I’ve been experimenting with a few dishes that have actually turned out amazing and will continue to use them.

So far I’ve made oven roasted carnitas, pork pozole, chicken pozole and currently have a mud pie in the freezer. All of these recipes I found on YouTube.

Hoping to try out more new recipes during this hiatus.

What are you trying that’s new or something that’s you been cooking for sometime and would like to share?

Here are the YouTube vids of what I’ve prepared.

Just posted it. It’s really good.

For the chicken pozole I just substituted the pork with the boiled shredded chicken in the second vid.

I've been using my smoker.  First, a Prime grade 16 pound brisket from SAM's.  Next a 14 pound turkey.  Coming up next; a 10 pound 4-bone standing rib roast.

Quick and easy and kiddie pleasie .. TLW’s old stand by in a pinch
Potatoes sliced and seasoned to your preferred thickness, pan fried.
Hot dogs cut into pieces pan fried a few minutes mix the hot dogs and potatoes put it in a casserole pan top with your favorite cheese blend and oven friendly ingredients. Oven roast at 350 to melt the cheese and heat your toppers. Garnish with the non oven friendly ingredients and serve.
Nice thing about it is just by adding different ingredients like peppers and taco seasoning or Italian seasoning and I hint of tomato sauce or spegetti sauce,  you can very easily cater it to your taste buds.

Go get a turkey .  Picked up a 13 pounder for 22 bucks.  Spatchcock it toss it on the bbq at 300 for 2 1/2 hours.  Have a thanksgiving dinner day 1.  Next day turkey sammies for lunch.  Day 3 make turkey noodle soup.  Day 4 use the remainder of the soup and make turkey pot pies. Easy, delicious , and a fantastic way to stretch 22 bucks into 4 meals.  And as we always say why do we only have one of the best meals of the year only once a year..
