Our staff visited Tembladera, in the remote Wild Coast region of Panama, and stared at the brave fish of the Pacific Ocean, fishing onboard kayaks. Poppers, jigs, and all types of bait were mercilessly attacked by Roosterfishes, xarus, stingers, ox eyes and a huge variety of highly sporting species

Actually, if you end up deep hooking a rooster that isn't going to survive they do make decent table fare.
Last year in Nica we had to keep one that wasn't going to survive so we fileted it out. Most of the meat is pretty dark with a section of white meat up by the head. I did the white meat as sashimi and the dark we treated like tuna -- seared, grilled, etc. All of it was tasty.
It definitely doesn't deserve its reputation as poor table fare. But damn are they fun to catch - I can't wait to get after them again.

Compared to all the other really tasty fish out there they are pretty shitty tasting.
Been there done that ate one because I killed it.

My captain buddy told me he used to eat them when he was poor  :smt044

But like you said depends on the preparation. Unless I accidentally kill another one they are all going back.
Or if I get the opportunity to shoot one  :smt001

In that case it will be on the menu at Albion  :smt005
