how does gifting a limit to your wife who is also traveling with you apply ?

If you gift your catch it is no longer in your possession and does not count against your possession limit.  It still counts against your daily limit so as long as you catch a limit today, gift it to your wife today, then catch your limit tomorrow and keep that for yourself you are within the regs.

  Would wife have to have a license then if with you and your fishing gear?

My understanding is no ... but the safest way is a simple note/letter stating gifting if x# fish on xdate from x to y.

 Sammy dives/ fishes/tags a pig/ limit of quail or dove excetera excetera excetera would be able to gift his wife that limit that day emailing her and fish and game at same time.
 she then accepting gift back to Sammy and Fish and Game even though you were 60 miles away from one another ?
