I have read on here about fish tacos, they sound good so can someone please tell me how to make them? I am not much of a cook but I do like to eat.

Here’s what I’ve had.  I’m sure others will add on.  Supposedly very authentic from baja.

Fish Tacos:
Small CORN tortillas (not flour)
Boneless Rockfish (or other) fillets  (Cut into small strips and deep fry)
Sliced Cabbage (no lettuce and no queso)
Salsa
Diced avocadoes (with a little salsa mixed in to give it a pretty color)
Chipotle Sauce (Make this by starting with Mayonnaise, thin with a little bit of water, and add a small amount of Chipotle pepper.  The sauce will be reddish/pink in color and have the consistency similar to runny salad dressing.  It will be hot.

Pretty simple from here.  Heat up a pair of corn tortillas, throw in a few small pieces of the deep fried fish, cover with cabbage, add some salsa, guac and chipotle sauce.  I mentioned “Where’s the cheese” and got some dirty looks.

Make sure you've got a cold beer handy to wash it down.  It was OUTSTANDING.

We do our fish tacos similarly.  This is the first chipotle sauce recipe I've seen, sounds excellent, we'll be trying it for sure.  We usually pan fry our fish and then slice/chop it and put it between our homemade corn tortillas.  Bits of homegrown tomatoes and onions usually accompany ours in the summer, avocado and salsa the rest of the year....... :smt016

My fish taco recipe is very similar to Stuarts:
1. Corn tortillas - don't even think of flour
2. White fish (rock cod, halibut, ling) - deep fried in batter
3. Special sauce - Veganaise (similar to mayonnaise) mixed with a bit of water and chipotle chilies
4. Salsa
5. Purple cabbage sliced thinly
6. Chopped onion
7. Fresh cilantro
8. Queso - the crumbly Mexican cheese (no american, cheddar, etc.!)
9. Lime wedges

Fry the fish, warm the tortillas, add fish, queso, and special sauce to tortilla.  Top with cabbage, cilantro, onion, salsa and lime juice.

SUPER TASTY.

The fish tacos were great! I used catfish because that is what I had.
The homemade chipotle sauce was great but very hot.

Not fish taco related, but here’s a super easy recipe for some spicy fillets:

Get a deep dish (or a plastic bag) and fill with flour.  Add Chipotle pepper and mix thoroughly.  You will wind up with a pinkish colored flour mix.  Through in some salt and coarse pepper in as well.  Coat the fillet (rockfish/ling/butt) with this mix (shake loose any remaining flour, so its only lightly coated) and pan fry with a tablespoon or two of olive oil.

Near the mid/end of the cooking process, squeeze some lime on top and sear.  It comes out very spicy and much lighter than a deep fried dish.

Garnish with some salsa and serve with rice.

Its all about the corn tortilla and cabbage and lime.

I find that grilled fish makes excellent tacos.

Real simple fish tacos.

Dice up some zucchini and fresh or frozen beans. Thinly slice a carrot ( I use the side of a pyramid cheese grater to slice).

Now toss all this in a lightly oiled pan on med high heat. Give it about 5 minutes until vegies are a bit tender. Now, throw in diced fish. Cook another three minutes of so until fish is almost done. Toss in a head of fresh cilantro with the stems picked out. Take pan off of burner and serve in your favorite tortillas with your favorite salsa and a mild cheese. Mozzarella is a good one.

You can mix and match whatever vegies you like and vary the amount of fish and vegies to suit your taste.

Oh, and the reason you take the pan off the heat when the fish is near done is it will cook after you take it off. This allows it to be more tender and juicy.

How I make fish taco's:

1. Corn tortillas - two stacked on top of each other, small ones.
2. White fish (rock cod, halibut, ling) - bar-be-cued on the open grill.
3. Jalapeno Ranch dressing (Lite-house brand is good)
4. Salsa - Home made THIS WAY
5. Coleslaw salad (carrots and cabbage sliced thinly, premade from the store)
6. Lime wedges
7. Tapatio sauce (Mexican red hot sauce)
8. Corona to adjust attitude

Stack the two tortillas, add some flaky fish, top it with the coleslaw, lime, dressing, Tapatio, and salsa.
Take a big bite and chase it with the Corona.
