I keep large plastic juice bottles and fill and freeze them. They last pretty good in addition to keeping the insides of the cooler dry. No more meat packages sloshing around in the icewater. I also keep said cooler out of the sun and sometimes cover it with a large, wet, white towel. Keeping the cooler closed helps too.
If you don't know where you're headed, any road could get you there.

I do the same. The big plastic juice bottles work great.
Since I don't have chlorinated water, if i feel like fish need to be quickly cooled I'll bash the bottle to crush the ice, then cut the bottom off the bottle & dump it on the fish for the drive home.
For standard camping you just can't beat the "no meltwater" thing.
