What should I expect to pay, on average, for a 1-3 year old Outback in good condition?

Depends on pre2018 or the newer 2019+. 
Also accessories and what not. 

Even the 2017-2018 outbacks are around $2500 for just the kayak in good condition. 

What is the main difference between the versions?

Hull design, age, mirage drive design, seat...

Was so lucky when i purchased mine. Found a guy in tahoe who did hobie rentals on the lake. Just happened i was fishing up that way. 1800 bucks. 2018 . Blessed.
