I have caught a lot of stripers fishing small bucktails.  So should work on kayak trolling.  Pink has been a hot color over the years.
No use if it ain't chartruese

Iv'e also trolled with a broken back rebel with a hoochi skirt and a zoom floating worm on the trailing hook. sounds funky and looks funky but it works

I have caught nearly all of my 2020 delta stipers with swimbaits, Storm brand, white and white/chartreuse have been the most productive.

My 2020 personal best striper was trolling a (frozen) herring about 2 feet off the bottom of the Napa River.  I use the MOOMOO Outdoors halibut rigging method which is great and very few tangles and lost tackle, plus hit it!
