It was beyond belief. 
        5, yes 5 fat Cabbies hooked by Tedski at HMB this past Saturday. Dom and I bore witness and cheered him on that sick streak.
       He offered one to me under the stipulation that I share what I make with the forum so here it goes:

Leche de Tigre (aka ceviche juice)
4 each limes, juice
Jalapeno, small dice (Mild-remove seeds, Hot use a serrano seeds and all, Fire use a habanero)
1/2 TBSP Salt

Add
1 Fat fillet of Cabezon, 3/4" dice
- Combine all in a stainless bowl and mix to coat. Let this soak in the fridge for an hour to firm the fish, can be more or less based on your preference.

Garnish
4 small cucumber  3/4" dice
cherry tomatoes, cut in half
1 red onion, Cut in half, shaved thin, soaked in ice water 20 minutes then rinsed well, drip dry
Cilantro               
Avocado       

Mix Garnish into Fish/Leche de Tigre 5 minutes before serving, adjust seasoning.

Serve with sliced cabbage, tortilla chips, and your favorite beverage.  Better eaten in the sunshine with friends and music.

I've found all rockfish to be pretty good.

This was a mix of copper, brown, ling and some other type I forgot.

Sounds delish. I enjoy my ceviche spicy as well. Here is a cabby i simply baked with light seasoning.
