Looking for some tips here before going out on my first ocean trip.

How do NCKA members generally bring big fish onto their kayaks? Net, Gaff, Kage? I was considering going the Kage route (I've read the discussions regarding CDFW's interpretation), but having second thoughts as I'd like to keep bleeding minimal as to not attract sharks. Would net + brain bonk be the way to go to keep blood down?

I would just not worry about sharks in the first instance.  Don't hang your catch over the side so you don't attract pinnipeds.  That's about it.  I would not stop bleeding the fish, the quality of the meat is just so much better when bled.

I also wouldn't worry about catching a large fish on my first ocean trip in a kayak, but hey anything could happen.  You might even catch a world record black rockfish!

Depends on the fish really.

RF just lip em
Lings lift from gill plate or use lip grippers
Salmon need a net
Halibut either a gaff, net, or lip gripper. Just shake the small ones off.
Sharks use a long plier to shake off. If you want to keep it I guess gaff? IDK I let them swim away.

Gaff or net, fish goes on clip 1st. Once on the clip...gils get cut with scissors.both sides. If it's a halibut /ling it gets bonked in the head. It will bleed out quick, then goes into the soft side fish cooler.  Sharks get let go unless you have time and Ice to go back to shore and properly taken care of.
