I'm about to thaw out one of the salmon I got. I'm going to fillet it and smoke some if it, eat the rest raw.

I want to make soup with the carcass. Any good recipes?

Go to Asian store and buy one of those Knorr Tamarind soup mix, just follow the instruction in the package and you're good to go. :smt002  :smt006

I always fillet my salmon and then lightly broil the carcass until it's done (but don't overcook it as it will dry out). Then pick off the meat and put it into a bowl.
Boil the bones and us the stock as a soup base. This is about as close as you can get to zero waste.
May the fish be mighty and the seas be meek...
