I'm headed to Baja. Little town 50 miles north of San Jose Del Cabo on the pacific side. We have kayaks there and I would like to do some trolling for Dorado etc. I have no idea what to use for lures or bait.. Any tiips would be greatly.

On the Sea of Cortez side, I've had good luck on kastmasters blue/silver or all silver for most species, 1/2 - 1oz. Kastmaster makes a 3.5" narrow body which works also. Also Yozuris red/wht , as you can see in my avatar.lol. Good luck.

Dorado are mostly surface feeders hence Rapalas and Krocodile type spoons work well.
Jiggig or casting irons will likely get you snappers, cabrilla and groupers
This time of the year you will likely catch Sierra, they will bite shiny lures and are excellent table fare

We are staying at a friends place in Todos Santos about 300 yards from the beach. There is no house but there is an outside kitchen, bathroom and garage with the yaks stored inside. It's a surf launch. The local fishermen launch outboards off the beach as long as the swell isn't too large. We will be doing the same.  I haven't been there for 15 years. Last time I cought a trigger type fish that were great eating but they had skin that even the sharpest knife had difficuly cutting.

I have taken them on rapala/yozuri type lures like the xrap in this photo, but if live bait is not available, a good second choice is bonito strips.  Good luck !

Baja is great.  Don't forget to grab a Mexican Fishing License for down there.  I've been checked in Cabo a few times, but usually when leaving port.  Not sure if they'll give a sh!t in Todos Santos or not, but better to be safe than sorry. 

Just hit the local tackle shop (or surf shop) and get info.  It'll be better advice than anything any of us give you. haha.  Check to see if Roosters are biting in the surf as well.  It's a bit early for them, but ya never know.  Jacks are hella fun to catch down there as well.

 You can now get Baja marine weather online for where ever you are fishing. With the kayak and being on the Pacific it will make it safer. You can grab a load of squid in Cabo, keep it in the frig, and use it to catch Triggers....use small hooks, and with the sabikis topped with squid, lots of bait.....Then live bait the bigger fish that are in....
   When cleaning triggers, start from the inside out with a long fillet knife. Sounds rude, but start in the anal hole, travel to the top of the fish, out by the dorsal....backwards, then forward. Great grilled! When fishing for triggers you will always get ripped by something bigger...
   You must get a license....you could loose your tackle if caught without. And, you are a poacher if you don't!
Maybe small chrome lures from the beach with a beer close by is also cool, unless there are roosters or jacks, then a larger lure. The tackle shops have it going on for lures.
