Hey All,
So I'm smoking my last few pieces of salmon as Christmas gifts, but my smoker won't get hot! It's at 130F and VEEEEERRRRY slowly climbing.
Assuming it doesn't get over 140F, will that work as long as I smoke it long enough?
All tips appreciated as time is of the essence right now.

You need to have a 200 degree temp for 2 hours, that will allow for an internal temp of 160 degrees for 30 mins.
This is needed to ensure that any nasty parasites are killed.
Are you heating with propane or electricity?

Propane. Theres definitely gas in the tank, and I even tried another tank. So the problem is in the smoker itself. It's a cheap one. Probably time for a better one.

If you have access to some compressed air, disconnect your propane line and shoot some air in the line to free any contamination that might be in the line.
You can get your heat up in  your smoker by starting a controlled fire in your wood chips.That requires a spray bottle of water, and sitting on it.
Or pull your racks and put them in your oven at 200.

Put a blanket over the unit to keep the heat in.  Hard to keep up the temp in this cool air, heavy towel or some insulation on the outside of the unit

Finish them in the oven at 180-200 after a couple of hours. It's actually ideal that you're starting them at a low temp like that, IMO.

Put ur propane tank in a tub with hot water and warm that bish up.

Thanks for the suggestions. I smoked it at 155 for 2 hours, then 200 for 20 minutes. Seems good!

A little late for you, but I built an insulating box for my Little chief, basically an altered card board box and some 1x2 pine for a frame. Works great. That said, mines electric, not sure if I'd have done the same with propane.
