I am a Sous Chef at a local casino and do them for holidays and Friday night seafood buffets.
I have been doing this for a few months now. This is my 8th carving. One unique thing about these is they begin to melt away so quickly that they seem to take on a life of their own and they can only be displayed once and then melt away, gone forever. No two are the same.
