We have made jelly and syrup and they are great.  It just sucks how much time they take to process. 

Lil known secret... you can juice them like oranges.,.. wastes a bit, but less work!

I have scooped out the insides and then put in a blender.  You have to scrape off the bitter foam but you get a lot more juice and then just strain it until there are no particles.   

with the turning orange juicer type, you don't get the Bitter as much. just juice that is pre strained by the juicer (if it is a nice one) coffee filters or cheese cloth does the rest of the fine work...
