I caught a 54in sturgeon last week and when I cleaned it I noticed the color of the meat was darker and pinker than other sturgeon ive seen and from videos ive seen. Ive caught a striper once with a similar color and it tasted bad, but this sturgeon tastes great. Does anyone know what causes this color?

Same color meat I caught a while back. Yeah, sometimes the meat is lighter in color. Perhaps the location and what they are feeding on.
