Sturgeon meat color

I caught a 54in sturgeon last week and when I cleaned it I noticed the color of the meat was darker and pinker than other sturgeon ive seen and from videos ive seen. Ive caught a striper once with a similar color and it tasted bad, but this sturgeon tastes great. Does anyone know what causes this color?

And yes it was bled immediately

Same color meat I caught a while back. Yeah, sometimes the meat is lighter in color. Perhaps the location and what they are feeding on.

I'm a little fickle and cut of another 1/4" of that bloodline

Not all me, I had one that I set too early and it unbuttoned.  My friend got the keeper after a short one the previous day.  11 fisherman 22 rods, you know, pier life.  All in all most action I've ever witnessed
