Smoked sturgeon 1/1/17

Going over peachwood after overnight in water, brown sugar, salt, soy sauce, ginger, garlic.  Different toppings as a flavor experiment.  Paprika and peppercorns, one brush of bacon grease on one, tarragon on one, light rosemary on one, dijon and dill on two, the rest plain.  We'll see.......

Keep us posted of the end results

The results are in.  Definitely flavorfull.  Plain is good, can imagine condiments and crackers, peppercorn-spicy and wished I cracked it instead of whole.  Herbed ones are intriguing and would experiment more with maybe an herb infused oil with more fresh herbs for moisture.  Bacon grease added a little somethin' but not much.  Dijon dill was crying for fresh dill and maybe honey and lemon zest for a winner.  All in all it was a victory cuz I like them all.  5 hrs in Big chief with one tray of smoke.

Make me want to make a NYE resolution, smoke a bunch of fish.....but I never make resolutions......almost.

You will smoke some fish this year!  No resolution, just a revolution.  I double dog dare ya' to smoke some fish this year.  First time is always delicious because of the inspiration.
