Getting ready to clean out my freezer and have some fresh sturgeon to cook. Never cooked it before and am considering smoking it. If anyone has great recipes would be awesome. willing to try out just about anything.

Yeah when you catch as many sturgeon as Rob does, I'm sure you could learn some decent recipes.

Beer batter fry. Cut into nuggets and dip with any sauce. Enjoy! Frying up some tomorrow from some chunks I got from my buddy on Sunday.

Two ways - chunks in what my buddy who makes it calls Sturgeon Balls (battered and fried) and Craig's smoked sturgeon I had at a Clavey's event some years back.

Getting ready to clean out my freezer and have some fresh sturgeon to cook. Never cooked it before and am considering smoking it. If anyone has great recipes would be awesome. willing to try out just about anything.
Smoked sturgeon is excellent.  I have a standard smoking recipe.  Try to make it your own with your own tastes.  8 cups water, 4oz salt, 8oz brown sugar, 2oz soy sauce, 1/4 cup chopped ginger, 1/4 cup chopped garlic.  Overnight.  Pat dry and put on racks until tacky, can use a fan......preferably cool in fridge for some hours if you have space.  Place on smoker racks and I have been using peachwood from Amazon.  While it is smoking that is when you can add some unique flavorings to process with with the low heat.  If you want it sweet, maple syrup, honey, lemon zest, cayenne.  I mix it with a little water to make a wash.  Broke da mouth kine yummy.  Onolicious and drop yo lips to da groun.........can put peppercorns, other citrus zests..........trying to brainstorm other ideas for smoking.  Sometimes I add an oil for richness, olive to keep moist.  It is fatty but the fillet shrink immensely in the smoker.  Smoke for up to six hours depending on thickness and temperature.  I use a big chief.  Also, I wonder how butter poached sturgeon would be. :smt006
