Which fish tastes best?  Give me your top 5!

I ask because I just cooked dinner.  I cooked a 14" black rockfish, and a 12" china rockfish.  Same seasons, same everything.  Both my wife and I agreed that the China just tasted better!

So what do you think tastes best?
Fish laugh when I paddle by.  Sometimes they laugh so hard they fall on my hook.

Chinas do taste better than most other rockfish.

My top 5 would be dominated by shellfish tho.  Razors, dungies, piddocks, coonstripes, abalone, seems about right.

My top is a scallop over fish any day.

Then Ling/Cabs which typically taste the same where ever you catch them.

As for Rock fish they seem to taste the same when battered and deep fried but taste different to me based on location they were caught and what they were feeding on.

Black rockfish is tasty, but I like the firmer flesh of vermilion. Striped bass eaten same day caught literally melts in the mouth.

My personal Top 5, likely to vary through the seasons:

1) ocean-caught Chinook salmon
2) thresher shark
3) kokanee
4) vermillion rockfish
5) striped bass

It's tough to beat both the flavor and the health benefits of salmon!  Thresher shark's up there partly because it's agreeable to a ton of different cooking methods and is more reminiscent of meat than fish.  Vermillion RF are a bit more oily than other RF and make for some amazing fish-and-chips.  Though I've only had a few meals with them, I love the buttery, flaky fillets of stripers.

Kokanee are my only FW fish on that list.  They're like eating a tiny Chinook with a bit of sweetness added and no "fishy" flavor.  I'd never chase the little farts if they didn't taste so damn good!

Halibut gets my vote.
Anything caught , bled and iced right away is going to be better than not doing so.

the best tasting fish is the one that I've caught and prepared myself :smt044
never been disappointed.

I would say that my favs are:
white seabass
halibut
striped bass
lingcod

I really like thresher shark, but haven't eaten it in a loooong time. still bringing the dang tailrope out when there is bait around though!
