Halibut in bowl, salt and pepper, lightly dusted with flour, shake off excess to leave light film of flour. Heat oil first,  saute in cast iron 3 minutes on one side 2 on the other,  medium heat,  1/4 cup avocado oil with Tbls Bacon grease.  Set aside
New sauce pan, medium heat, saute 3 tbls onion until slightly caramalized in olive oil, add 2 diced plums(in season), saute 2-3 more minutes, 2 Tbls mirin to deglaze, 1 cup chicken stock, medium high heat, and reduce 3-4 minutes, too much will make it too salty, turn off heat, add 1/8 tsp cayenne, 1 tbls rice vinegar, squeeze lil lemon, handful of fresh basil, 3tbls butter.  taste for salt, serve on side so kids dont freak and ladle over hailbut with pasta.  Wish me luck.  pics to follow.
