I kept my big YT whole on this past Islander trip so that I could get some pictures of it and let my kids see it. My boss' boss was going to fillet any fish I brought back but he ended up going out of town on business last minute.

SO - if anyone with some skills wants to fillet this thing for me I will give you a big chunk of it!!

you could always ask Santa Rosa Seafood if they would do it? I have never used them but just looked them up online.
