I've been considering getting a drysuit for a while now, and just started seriously looking at the options today. From what I've seen so far, it seems they all use latex for the seal around the neck and wrists. It's not like I'll die if I touch latex, but my skin becomes red, irritated, and itchy---very unpleasant. So, I'm wondering are any drysuits available that don't use latex, or is there some easy way to avoid skin contact with the latex? Thanks.

If you want a true drysuit, I think they all use latex.  You can get a paddling suit that at least has a neoprene neck gasket, but I think they still have latex wrist gaskets. Neoprene will leak a small amount of water over time, but for a typical kayak angler, this is almost never an issue.

The Kokatat Angler Drysuit is semi drysuit.  The neck is neoprene for comfort and has wrist latex gaskets to keep water out.  Its designed for SOT kayak fishing and not getting dunked in cold water like a white water kayaker.

I had a semi-dry scuba suit years ago, it had neoprene neck and wrist gaskets and they worked quite well for the hour or so that I was in/under the water, they are smooth skin type like the inside of the freedive suits.  Call Kokatat and ask if they'll put neoprene wrist gaskets in a suit for you.

This "Stohlquist EZ Dry Suit" definitely looks like a good option. It's got a neoprene neck gasket and the price is not too bad. That just leaves the wrist gaskets which are "a soft neoprene coated Duraseal latex", so that should be OK too...

The latex is still against your skin at the wrist gaskets of the EZ.  It should be called latex-lined neoprene.

Call Kokatat.  They're very good about making modifications at no extra charge.  The downside of that is that if you order modifications, you better be happy with it because you can't return it for a refund.

Here's a video of the EZ Drysuit.  Yes its a lower price but does not have Cordura seat, knee, & elbow reinforcements that are high wear areas.  Trade off for paying less.

That's true, but the EZ is made of a four-layer material and the outer layer is pretty durable.  Not as heavily armored as the Cordura-covered area of Kokatat Angler, but more durable than most.

I contacted Kokatat and they only do latex gaskets. It seems odd, because I've seen silicone gaskets for dive drysuits.

Anyways, somebody suggested a "neck saver":
