I have friends and family in Dutch Harbor, Kenai, and Sitka. All have boats, but nobody has kayaks. Anyone up to drive the Elk Can with a roof rack? Free lodging and mothership services when we get there!

If you're flying into Anchorage, I'd try Alaska Raft and Kayak for rentals.  If you're heading to Valdez, check with Kimberlain's.  Last I heard they were renting out the P13's we sent up there in 07.  In Seward, you can still try Liquid Adventures, as they exist and have at least 2 P15's from Chris' old fleet.  In Anchorage, try Howard, he may still have some fishing kayaks around for rental.  In Prince of Wales Island, try Coffman Cove.  They have some Hobies there.  Jude, is this where you are talking about?  There used to be a guide in Juneau years ago, who mainly catered to the cruise ship peeps.  I've never heard anything more than that about him.

Alaska is huge.  As you can see, really no kayak fishing guides.  And just as few rentals.  I'm constantly researching areas to go up there and have a pretty good idea of the lay of the land.  Getting kayaks is the hardest part of the logistics, to the point that I've often considered shipping a few up there and having some friends store them.

Google kayak rentals for Homer and Steward. SIKs are available . Most rental SIKs will be very stable for a SIK, probably 24 inches wide instead of 22. You might consider that as an option and going minimum on fish gear, no rod holder etc. As Alan said, finding a SOT for rent might be difficult.
