An 3 meter (10ft), weighing 544kg (1200 lbs) White shark traveling through the water at 11 m/s (25mph) hits a kayaker weighing 136kg (300lb kayak+gear+ meatbag)  dead center. What is the force of the hit, and what is the acceleration of the kayaker?

If anyone cares to help control confounding factors such as force absorption of the kayak, and/or better estimates of weights/speeds, or mess with vectors... then have at.

Don't forget to calculate in the surface tension of the kayak in the water as it is attempted to be lifted.  At what angle should the shark be attaching from in relation to the water line of the kayak?  :smt002

So because I was screwing around in class is this a elastic or inelastic collision ...

I treated it as an elastic collision. But, I highly encourage you to take a giant calorimeter with you when you go out.  When you get hit by my hypothetical shark you can tell us how much kinetic energy was converted to heat.
