Do you guys make chicharrones from your salmon skin?  Grilled over a hot fire or in a hot skillet with a little oil for just a few seconds....  damn delicious.  Like bacon.

Haven't tried it with other fish skin.  Have you?

Haven't try it chicharrone style but tried it deep fried and sprinkled with lemon.  Yummmmmm

haven't tried it alone like that, but I do like munching the skin off grilled salmon.
I've heard that white seabass skin is similar and not to be wasted.

Next specimen of either that ends up in my tankwell will be tested!

I typically think of chicharon as fried ... well, Filipino chicharon.

Double frying is the trick to making things super crunchy.  Fry chicken, chicharron, fries, etc. once....pull it out to cool....then fry again.  My family makes really good chicharon
