I just use the same ones from my tool box. I think they are Snapon. Wash with freshwater and lube up regularly.
I only fish on days that end with Y

Cheepest thing at harbor freight, a little oil & toss/loose when they become too bad to use.  Couple bux spent.

I gaff lings that I know are big enough (in the lower jaw). Also gaff halibut that are definite keepers (in the gut). Rockfish I'll usually just heave into the yak unless they're big enough to need netting. Salmon get netted with my bigass Frabill.
Pretty much exactly the same for me.  Use the net much more in freshwater for bass and trout.

And for pliers I used to carry a decent Gerber with me, but even with care it eventually rusted on me.  Have been going with these in the last couple years, which also rust but I keep them lubed and they work fine, plus the can cut through any hook: http://www.homedepot.com/p/DEWALT-11-1-in-Compound-Action-Long-Nose-Pliers-DWHT70277/203040541
