What are ppl using to slice and dice?  thinking about going big with this Dexter Russel sword

You like big ... go 12" Forschner Cimetar with a granton edge.  Now that's a sword!

i just bought the Bubba Blade 9" flex and have used it on about 15 or so rock fish  ranging from a 35'' ling to small rockies.  best knife i've used yet.  also have a 10" Marttiini that has held up well over the last year with a lot of abuse.
I seem to buy a new fillet knife once a year or so but normally they were on the cheaper side ranging from 20-35$.  they held up fine but would loose their edge kind of fast.  that's why i spent the 65$ on the bubba blade.

I've got a little Dexter "cut n gut" knife that comes on board with me, and a cheap 9" Kershaw filet knife for fileting back at home. I've had cheap knives and expensive knives, and found they both work just fine if you keep them sharp.

I have a set of Japanese blades that I only use for seafood. I dont know the name of the set cause I dont read Japanese.
My biggest worry is that my wife(when I'm dead)will sell my fishing gear for what I said I paid for it

+1  I've had my Dexter for about 10 years, love it.  They also make a diamond hone to keep it tip top.

I have a really pricey 9" blade (I think it is swedish?) and a cheap k-mart 7". The main difference is in the steel. Expensive steel is tough to sharpen, but holds an edge for a long time. Cheap steel is quick to sharpen, but dulls faster, especially on tough rockfish scales.

I use a chef-something electric sharpener a few times a year, then a quick touch up on a whetsone before each filleting session. After about 5-6 fish I resharpen on the stone.

I just got a little folding fillet knife of indeterminate make that should be a good camping/traveling fish blade.

I bought a bunch and then found the handle with metal groove sharpening tool to start and little ceramic groove to dress the blade works best...any knife that is sharp and stiff is my best..I found knives we had from cheap target kitchen multi knife sets would sharpen up and hold an edge and out perform my other real knives $$ rapalas and kershaws that got the same sharpening..I have a 7$ wal mart  knife that will cut the head and collars off big lings right through bones...then cut through a limit of rock fish outer scales ..then take the fillets off smooth as butter..was in our kitchen drawer -no name...

I have that sword and it was great for bigger fish but hard to maneuver for smaller rockfish.

This is my favorite, and though it's a little smaller than others it works great for me:

I really like the curve in it, and it's held up really well for being such a relatively cheap knife.

I like that Dexter too....  I also have a wooden handle, thin & flex Rapala that I like.  The new 'Cuda' brand intrigues me for a cheap knife.  Might order one up & try it out.  I like the way the handle feels in the store.  Seems like it would be great when the hands are wet & slimy.

Update:  Just ordered one of the Cuda 6" fillet knives for ~$8 on Amazon.  Be here Friday.  Worst case I'll toss it in with my camping gear.
