Some times, simple is awesome! Pan seared some wood duck breasts and leg quarters in olive oil. Three minutes each side on med high, then turn one more and sear two more minutes, set aside and add green peppers, onion, and garlic, saute Iin the oil and duck fat two minutes, served on rice with sliced tomatoes!
I am satisfied...mind, belly, and soul!

Looks delicious!!  if I'd have had a pellet rifle I could have had some fresh wood duck today!  Lots of crippled birds swimming around Franks Tract today.  We saw wood ducks, golden eye, and even a beautiful drake widgeon out there that couldn't fly.

That sucks. It was delicious! Cody and I BOTH got a limit of cripples out at mildredbefore Christmas.  :smt013 I think they were sailed over the levee from the clubs in the fields. It was crazy.
