My buddy and fellow DOTY competitor StinkyPete stopped by my office the other day and gifted me some packs of frozen sheephead filets so I decided to use two of them to try making a ceviche to stoke out my employees.

Defrosted them, trimmed a little of the darker "blood line" meat off, chopped it up, threw it in a glass bowl, squeezed just enough lime and lemon juice to cover it and put it in the fridge.

Waited about two hours, drained off the juice into a glass, squeezed some fresh juice on, threw in a carton of pico de gallo from Mi Pueblo, mixed it up, and put it back in fridge for one more hour.

Then served it on tostadas with some avocado.

Super good and super simple, and the texture of the sheep was perfect!

Didn't add any salt or spice cuz tostada gave it enough salt and the pico de gallo had enough jalapenos in it, but obviously you could add whatever your taste buds wanted.

I have not tried Ceviche yet, I know that lemon and lime will "cook" the meat but I'm still a bit touchy! I will have to try this, still have some lings and rocks in the freezer!

Once its frozen any/all potential parasites are killed. It's good stuff Ryan!!

Inspired by jims sheep viche recipe, made some for the game using fresh frozen rockcod.

Added some blood orange for sweetness and aesthetics. Yum
