we had some smoked Rock fish given to us by my Buddy who is really good at smoking stuff last week.

so we did some research and bought an electric smoker...next is ribs and then beef jerky and then ???

I had some Lings frozen and thawed em out and we marinated overnight and went and tried  our first batch...ended up with Ling Cod jerky  :smt003  which is so good

I was at work when my gal did the first try yesterday and it was too high on the heat and maybe left in on too long
we are going very gentle heat today and shorter time...but man for a first time mistake this jerky is so good

plus the ones that are done too much for jerky even---the beagle thinks they are done just right  :smt005

Yammy holiday food!
Rock fish are harder to smoke than oily fish in my own experience.
Have fun with your smoker!
Happy holiday!

I've been looking at that same Masterbuilt smoker. Sounds like you're happy with it so far?

I broke the little thermo probe(tipped over when assembling)that wing nuts in the door..called the 800 number on the instructions...I got this southern gal who-registered it for me on the phone-sent me new thermo -told me she has the same one-then spent 20 minutes telling me trick and tips and ways to make ribs...unreal customer support...great reviews online...whole forums like ncka where they fight online about which way is best with tips and moderators and newbs...who would have known

they say this smoker is great cause of the in door temp-elec -and sturdy-easy clean...we think it looks great too

How was the smoked rock cod? i haven't tried it, thought about it, but wasnt sure if the lack of oils would be an issue.

Just smoked 4 pounds of salmon last weekend, yum!

A nice light smokey shell and like butter inside. So good.

I smoke salmon that turned out good but when I tried rock fish they tasted good but were kinda dry and real chewy.  I used the same recipe for the salmon and rockfish

Porky that salmon looks bad ass...my buddies rockfish was perfect the salmon he did this spring was unreal too...slow and low heat short time is gonna be my next try for the rock fish and maybe a oil  in my marinate sauce too

FWIW the rock fish / ling jerky/overdone try,  is pretty darn good anywyas...gonna be a road trip/camping/events/work /otw/on the couch treat  :smt005...

I was told to get a big chief at first by my buddy, but we saw this one ,and he had already told us they all work good..we got the bigger size too be able to do lots at once...smaller would have been just fine though...I was told all of the smokers on the market are pretty darn good ,and, I read on a smoking forum that even long time wood smoker guys and gals are now trying the electric patio size ones too,due to the easy use and same results as old school  wood /fire smokers...

If you do a search you'll find past threads concerning the issue of smoking cod.all that I've done have come out rubbery  and over brined.when you get it dialed in give us the numbers.[emoji226]

I have the poor mans  smoker, Little Chief.. No clue about the Mastercraft myself.

I actually have the Lil Chief and that exact Mastercraft, love'em both, the Lil Chief I use more for things I don't want to get hot since it seems to make good smoke at a lower temp, it has a small element just under the pan.  The Mastercraft has a bigger element and the whole thing heats up even tho the pan just sits on a small portion of it.

8hr pork butt in the Mastercraft is to die for.

I've also used the Mastercraft as just an outdoor oven as it will do 350 easy.

Enjoy!!!!
