I guess it's a mouse living in my truck. Every morning for the last couple of days I find a little pile of chewed up stuff. It's chewing plastic. Arrrrggghh!!!
Any advice? I'm starting by pulling everything out, except the driver's seat.

traps or leave some juicy fruit gum laying around. The gum will plug him up.
Get him before he starts chewing on your wires

I hate killing things for no reason, I've tried to keep my place mouse free with barriers and making sure there's nothing for them here,

But when that doesn't work, (they will bring friends) good old fashion snap traps are the best, bait it with a little bacon.

Juan, get some snap traps with peanut butter and place them around the edges of the truck.  They like to run next to something.  just be careful when cupcake rolls over in the middle of the night.....

I use a combination of electronic noise deterrents, snap traps, sticky traps, poison in child and pet proof bait boxes, been having a hell of a problem with wood rats this year.  I put the snap traps and sticky traps inside my garage and sheds so the reptiles, birds, and amphibians don't get trapped in them.  I actually have a very large toad that lives in a bait box, I put down a new box that had no poison residue in it for him.
I use wire to attach the snap traps and sticky traps to something as sometimes the rodent will still be alive and try to carry off the trap.
I would try to get that mouse ASAP in your vehicle as they can really mess up your wiring.

If you don't get it with trap try a bug bomb
When renters moved out they had lost their hamsters I put 6 bug bombs in the house worried what else they left behind. Canme back couple days later 2 hamsters and 6 rats dead in basement. Did the same for Rv later on.

I thought about a bomb but didn't want a hidden rotting mouse body in my rig. Cupcake wouldn't approve.
So I tried a proven method. It tried for the piece of apple at the end of a toilet paper roll, and went for a long swim.

I hates them rodent. Here in Texas we have us some of them big invasive ones that have crossed over from Louisiana. I saw a few in Plano a few months ago around Spring Creek. They are about the size of a medium sized dog and about 25-30 pounds. Supposed to be good eating too. If they weren't in city limits and in a damn park the bow would have come out and I would have shot me a couple

I use a 3-iron, mostly....

Or a bamboo pole with the chef's knife duct taped on the end.

You got him! Great idea,  I was going to suggest getting a box of moth balls and putting a few bags of them in your truck, the mice will split.
