My mother still has not provided the recipe that I really like but I am working on her.  In the meantime, this one is also very good and easy.

One good one for fish filet( preferably a thick one)
Squeeze lemon juice over both sides. Place fish in single layer on foil or tray on a rack.
Put thick layer of mayonnaise over top side of fish.
Broil till mayo turns golden-brown
Either serve at once, or let cool on rack.

The extra mayo will have melted around the fish, leaving it juicy and tasty but with almost no fat on top.
If you want, you can then sprinkle with chili powder or flakes.
The fish is never overcooked, and always tender.
Worth trying.
Of course, you need to pay attention while it broils...
It looks great and taste super...
I've done it with Salmon, Swordfish &  Halibut with v.g results.

If you do it in the microwave oven, the lovely color isn't there, and the fish looks bland, though it cooks well too. You can then top it with salsa and Chinese parsley...
