Who ever prepared the octopus that was caught during the tournament please post instructions because it turned out perfect.

I was busy helping jack fry fish for tacos and didn't have time to ask for detailed instructions.  I heard something about boiling water/20 minutes and skin removal, but was not sure how the skin was removed or if it was just a coating on the skin.  It was as good as any octopus from sushi restaurants so please post the how to as I am going to try and get an octopus on my next dive.

I did the puss the way fuzz showed me, so all credit goes to him.  :smt001

First of all you need to get the slime off the puss...

Get a bowl and some salt and a beer. Pour the beer over the puss and massage the salt into it...

I find coarse rock salt or icecream salt is better cuz it has more texture and seems to rub the slime off faster.

As you massage the salt in you will see the beer get crazy foamy...this is the slime coming off.

Rinse in fresh water and repeat salt/beer massage until the puss feels rubbery instead of slimy. Don't leave soaking in salt/beer cuz it will soak up salt and be VERY salty...BTDT.

Then drop the puss in a pot of boiling water and let it come back up to a boil....leave it boiling for 15-20 minutes or until you can poke a chopstick into the thickest part of the tentacle, the technical term for this is "chopstick tender"  :smt003

Then take out of water and use a knife to cut off all the fatty skin from the tentacles and between tentacles and head etc.

It will be obvious what you want to cut off....don't worry about skin on skinny end part of tentacles, you just wanna get the big flappy fatty skin cut off...put aside and try it...I think it tastes good, but the texture is so different from the tentacle texture I think that is why it is removed.

The remaining meaty tentacles/head are what you want to eat....you can chop up for ceviche or poke or slice thin and make sushi or sashimi or whatever else you want...

On Saturday INSAYN gave me the bag of puss like 1/2 an hour before potluck/awards were meant to start so I ran over to Dennis Shu's (OldNo7) room at Mario's Motel put a pot of water onto boil, threw puss and salt and a beer in bowl, rinsed off in motel room sink, threw in and boiled as quick as I could, took out when tender enough, dropped in bowl with ice to cool down so could cut skin off quickly, Dennis sliced it thin, threw it in a tray, grabbed one plastic bowl for soy and one for soy/wasabi and ran back to potluck.

I've never dealt with such an amazing creature before, let alone a kayak.
Getting to eat some that fresh put it way over the top.

I went diving today but couldn't find me an octopus.   Thanks for the details on preparing.  Not afraid to try it now.  Not sure about the wasting beer part, but guess I can sacrifice a cheap beer.  Can't waste pliny.

LOL! Yeah, I just throw in the cheapest beer I got...not sure if the beer is really needed or not, but that's what fuzz told me to do so that's what I've been doing.

Followed your advice for the remaining arms from my octo. 

Turned out great! 

It is pretty obvious what to remove.  After boiling it, the fatty skin felt a lot like fatty pork skin.
I didn't even need a knife, just pulled it all off all the way up to each suction cup.

This was the first time I ever fiddled with octo, from catching, dispatching, cleaning and prep. 
Can't wait to do it again, thanks for all the tips and help.
