I know there are significant variables like weather, wind, etc., but you have to plan, so:

How many miles per day do you plan for on average on an ocean tour, like going around Catalina island?

Without significant stops to fish, dive, or whatever?

With significant stops to fish, dive, or whatever?

Different when the day calls for a 20-26 mile plus open ocean channel crossing?

Different if you plan to sail part of the way (like in a Hobie Adventure Island)?

Thanks for sharing your experience.

Based on a good number of one way long distance shuttle trips, paddling / pedalling a SOT, for a total time on the water of approximately 7 hours per trip:

8 miles, 1/2 fishing half travel
12-15 miles, 2/3 travel, 1/3 fishing
20 miles, max practicable one day fishing SOT range

These rough stats complied by seasoned kayak anglers. Always expect unfavorable weather.

You are sure keen to get that Islander wet. Why not spend a season getting intimate with that hybrid of a yak before undertaking an expedition style trip? Do you have much saltwater time in a yak? Crossed any major channels?

Good luck to you
