I know most use vacuum sealer to keep fish for long storage but anyone still use freezer paper for the same reason?
I don't have much to freeze and I have a sealer  but vacuum bags are expensive.

Vac sealer is 10 x better.  I used to use freezer paper but the results from vac sealer make buying a roll or two of bag material so worth it.

I have a master butcher friend who swears by paper, won't even think about using a vacumn sealer, but he is old crothety and set in his way, but damn can he break down an animal, for fish though I believe vacumn is much better for quality, cameron

I used to use freezer paper and plastic wrap for fish.  It works okay, but once I started using a vacuum sealer I'll never go back.

Another method I've tried is to immerse a fillet in a Ziploc bag filled with water and freeze the whole thing.  The fillet will be frozen solid within a "block" of ice in the bag.  This works to prevent freezerburn, but it takes up a lot of room in the freezer.

Vacuum sealer rolls might cost a few more bucks, but they're totally worth it.

Try online at vacuum sealers.com. You can buy bigger rolls for much less. I find they work better than the off the shelf brands.
