The only time I dangle my legs over the sides of the X-Factor is when I'm trying to break off a snag in rough water.  No dangling, no side-saddle, no stringer of fish in the water.

I'm now reconsidering how I use the limited aft storage on my little hobie sport.  For the most part I put fish back there in a burlap sack on a clip, but lately I've included a milk-crate, bungied in for additional gear.  Only once have I dangled a larger CA halibut over the side while out -- because I had no place to put it in aft storage.  I think I may revise how I stow/carry additional gear and leave this aft space reserved for the catch. ….  or "get a bigger boat."

Reconsidering my aft storage options ..

I think the type of approach a given species of shark uses in hunting prey needs to taken into account to measure the degree of risk of foot dangling. I suspect that GWS, the main shark risk to a kayak fisherman on our north coast, would aim for the kayak hull, not an appendage over the side. Yes, one's foot could be hit in a strike but probably not targeted as  Hawaiian sharks seem to do to swimmers arm and legs. When landing large fish or breaking off snags having feet over the side helps prevent flipping over which is a much more likely risk that can lead to problems than the remote possibility of a shark bite.

Hate to see this stuff. The only time I dangle anymore is when I have a very large salmon or the like, only when in rough water. I do dangle when I pee too, but I'm white and can't reach the water with my ........

Yeah, whitey don't nibble.

I'll hang my feet over for the reasons suggested, as well as crabbing, but don't normally fish with 'dangling" feet in the water. Plus, in HI I'd probably use a shark shield as well, if I had one. Tiger sharks are apparently wicked opportunists.
