Or let it sit a little longer, the eggs will suck in more heat from the peppers.

Actually, one of the things I've done with a few batches is eat an egg every day.  You can track the development of the flavor and texture over this time.

+1 adding some habaneros I messed the whole recipe up by having to small of a jar they are very sweet.
I want fire!!!!

I bought these spring loaded canning jars with gaskets from Goodman's on line here is the link.

They are great for coffee beans and rice too. I should have bought some of the
1 1\3 gallon jars!
I just finished my second batch yesterday and went easy on the pickling spice. Will post piicts., but sometimes it won't let me post when I'm using my tablet. Here goes....No Dice---I had to go to my Mac Book.  Here goes again.  just had to throw in last night's dinner of elk steaks and burgers sorry guys!

Well no habaneros at the store so I went siriacha. Hell I can't make this recipe much worse. Or can I ? I will let ya know.
