I used to have a dead apple tree in my yard, but no more...

  what do you guys use for smoking wood and where do you get it...?

got lots of Albacore to smoke...

Good going on the albacore! I agree, I use alder for fish. Apple is nice and mild also...

They may know someone in your area. I buy wood chips from them and lump charcoal for smoking in the green egg.

Hah!  One thing we didn't talk about on the boat.

I like cherry.  Apple is good too.  And I do NOT use the "meat" woods like hickory or mesquite.

yep O2B convinced me mesquite and hickory are less then ideal. I keep alder, cherry and apple in stock. most sporting good stores (that have a real outdoors section) should carry it. I have also seen it at some hardware stores but that may be seasonal. They usually come in "chip" form in a clear plastic bags

Next time you are in Humboldt go to almquist lumber in Arcata and stock up. All kinds of smoking woods there.  A very dangerous store if you are into woodworking.

I like to use most fruit trees, alder, hickory, and oak. I use mostly alder and apple. I have a few old apple trees where I hunt, and take the old limbs and make my own chips with a draw knife.

I really like Madrone for fish and meat, and it's freely available where I live.  If I have to buy, I like the cherry and apple ones.  Like others have said, hickory is too intense a flavor for me.  But you can mix it with some others for a different flavor.  I'm thinking about smoking some cheese and nuts soon.. yum!

I have A connection down at Scheid winery and like to use the old broken up wine barrels. Sometimes I even get the wine soaked pegs.
