Check out how this guys fillets a salmon. Very efficiant and gets all the meat, plus a handy tip how to pull the bones.

That's expert use of a peeler.  Removing the belly leaves me wondering though.  What does he do with it?  Also forgot to take cheeks.

Very cool, but I'd probably cut my finger off taking the 2nd fillet off that way  :smt003, love the pin bone tip though

Ive tried it this way a few times and the main reason i like it is because its super simple to get those rib bones out on the 2nd fillet. I did go back to the regular way of filleting though because it just feels like cutting butter with a hot knife
