Decided to mix it up. I got 2 beef brisket, 2 big pork shoulder butts, and a huge slab of pork belly. Cooked up the different brine for all them tonight and they will all be going into the brine tomorrow morning and soaking up goodness. Going to start smoking brisket and pork butts Thursday night. Grilling pork belly over the fire for Friday nights dinner.
