as far as wood handle ....if you find a Pro-Build or other builders store and ask for left over pieces of stair handrail ....most have 3,4,5, foot sections cheap ...great quality wood that is very workable ...Both of mine are just carved out with pocket knife some stain then about 10 coats of Teak wood sealant spray (15$) and it is what it is.

Better the hook larger than too small. That hook looks fine. I made a gaff from a used graphite golf club with good results. Lost it on a beach somewhere tho.

Back around 15-20 years ago, my dad took some square steel stock, took a torch to it & "forged" a twisted (like we know wrought iron to look like) it then made a gaff hook end for it for a co-worked of his at the time.  This same co-worker is now my boss & he STILL has that gaff at home.  Uses it as his Tuna gaff!

Gaff #2 graphite golf club shaft the hook is strait shanked epoxied in and then double cross pinned with sst roll pins.
