My wife's gotten pretty good with the crabcakes, but the open-face sandwich is a favorite right now for daughter and I.  Last night I ate two, she ate three - at just under 13 years old!  Proud of my little eater.   :smt001

Al,  I recently vacuum packed and froze some crab clusters and they were as good as fresh when we ate them.  They were only frozen for a couple of days and I defrosted them in an ice chest on the way to Oregon, about a 10 hour driving trip.  They were eaten shortly after we arrived in Oregon.  I'm not sure if it was the vacuum packing, short term freezing or the defrosting method but they were as good as fresh in my opinion.  This is the first time I have had frozen crab that was as good as fresh.  I guess I'm going to have to isolate the issues to determine what was the determining factor.

Good to know, Martin.  Crab's such a potentially scary meat even when it's fresh - seems to always be on the verge of being stinky and gross.  I've never frozen it.  This was two days out of the cooking pot, so it was fine.  I ate some the other day that was 5 days in the fridge - not fantastic, but not gross.

Nice Eric will give it a try, if I catch any more crab. Tough season down south. As far as calories, nothing compared to my favorite HI dish Loco Moco.  :smt007 Not to thread jack, but it works better to to pick the meat before freezing because freezing clusters or a whole crab often punctures the freezer bags. You have to freeze the first day also. :smt003
