Well the spearos have been using this recipe for many years but I only found out about it last year.  :smt011 The earliest post I could find was from 2007 from a guy named Malibu Mike. It works well with ling cod, vermillion and halibut also. If you get it cooked just right with the carmelized brown coating on top it is No Ka Oi!!! :smt007

White Seabass Sex Sauce
Malibu Mike Sprearboard.com

Ingredients:
1 cup Mayonaise
1/3 cup soy sause
2 TBS olive oil
2 TBS sherry
1 lime (juice)
1/2 TBS sesame oil
2 garlic cloves - chopped
Handful of fresh cilantro - chopped
Splash of tapatio sauce or Tabasco to taste

Directions:
Mix this all together and chill for 2 hours.

Dip your fish in this sauce and then grill it on oiled aluminum boat shaped foil on the BBQ. The trick is to make sure the sauce cooks with the fish. Put it on before cooking and make sure the sex sauce gets a little brown and bubbly and you wont taste mayo, only the seasonings, the mayonaisse simply seals the fish up so the juices dont run keeping it moist and tender.

I have been trying variations of a "special sauce" for fish tacos for years that takes me back to the early days of buying fish tacos off the corner stand in baja, and its simple.

Take a generous portion of mayo and mix in Sriracha or any red hot sauce then add a little water for a good consistency. Mix a little water in so that it is still a little thick but can be poured. Another variation could also be done with a little non-fat sour cream or plain yogurt instead of the mayo.

My kids put it on  everything. If you look carefully at any picture of a loose screws hookup, you will find it. I got this recipe from Sunset Magazine. If you want it spicier, throw 4-5 chipotles without cleaning them and some adobo sauce. I made beer battered WSB tacos for 30 of Karen's tennis friends last weekend and it was the bomb.

Chipotle Tarter Sauce
Rinse 2 Tbl canned chipotle chiles and discard seeds and veins. In a blender, whirl chiles with 1 cup mayonnaise, ¼ cup sweet pickle relish and ¼ cup chopped onion until smooth. Makes 1 1/3 cup.

I am a 100% dark lord addicted.  Will try the sauce but substitute Sriracha for the tapatio
