Anyone have great recipes for crayfish?

This last week I made a jambalaya with the crayfish, crappie and hot cajun sausage that brought on the heat and even my wife ate a full plate  :smt007...this weekend, I modified a crabcake recipe using crayfish and eight different peppers and added just a little corn flake meal with the panko... wow.. incredible! Now I am hooked! :smt007

Gotta get back out next weekend and see if any of the little bugs are out there. :smt006

Anyone else eat these little bugs?

Go to any Boiling Crab restaurant and buy their "whole shebang " sauce and mixed it in the crayfish and boil. :smt002

 :smt007.. I like to use the crab boil and add fresh garlic, onions, celantro and many other spices.. You could add  fish fillets and veggies! :smt007

Nothin beats eating fresh caught out of a pristine stream in the mts and grilled over a campfire. That aside, every time I make etouffee with them I never have leftovers.

Are those little crayfish good to eat out of the rice fields. I have heard that its not safe because of the insectides?

 I have saw people collecting them,not sure if they were for eating or bait,i wouldn't eat them.

mackrel slayes them its avaiable at most bait shops. carefull to touch when thawed tho very oily

A guy i know uses raw bacon  and or cat/dog food in a can  in Donner lake,i don't use traps i catch with hand on scuba.

Craw Dad Corn Chowder


INGREDIENTS

1 Medium or Large yellow onion, diced
1 Cup celery, diced
3/4 Cup carrot, finely diced
4 Tbsp canola oil
2 Cup corn kernels (canned)
1 Tbsp blackening seasoning
2 15-ounce can stewed tomatoes (diced or whole)
8 Cups organic (free range) chicken broth
1 1/2 Crawdad tail meat
Valentina (Mexican hot sauce), salt and pepper to taste
Sprigs of fresh mint thinly sliced


DIRECTIONS

In a medium stock pot sauté the onion, celery and carrots with canola oil over medium heat until the vegetables become softened.

Add the blackening seasoning, corn and tomatoes. Stir and let simmer for 15 to 20 minutes or until tomatoes cook down (if using whole tomatoes, this may take a little longer).

Add the Crawdad tail meat and organic chicken (free range) broth. Simmer for about 30 minutes until the Crawdad tail meat is cooked but still firm, stirring occasionally.

Valentina (Mexican hot sauce) to taste and adjust seasonings, adding pepper and salt as needed. Just before serving add thinly sliced fresh mint to the top of soup and serve with rice and over warmed garlic bread.
